    Collect sap

    Collect fresh maple sap from sugar maple trees in early spring when temperatures cycle above and below freezing. Use food-grade tubing, buckets or bags attached to taps. Aim for approximately 40 liters of sap to yield 1 liter of finished syrup (sap-to-syrup ratio varies; this recipe uses 10 L sap to produce roughly 250 ml syrup as an example—see servings). Keep collected sap cool and process within 48 hours to avoid fermentation.

    Filter debris

    Pour collected sap through a fine mesh or cheesecloth into a clean cooking pot to remove bark, insects and large particulates. If sap contains visible sediment after settling, decant clear sap into your evaporating pot, leaving sediment behind.

    Evaporate sap

    Pour the filtered sap into a large, wide, heavy-bottomed stainless-steel pot (or outdoor evaporator pan). Heat over medium-high heat and bring to a steady simmer. Keep the pot partially covered early on to prevent heavy splatter, then remove the cover as volume reduces. Maintain a steady boil, skimming foam and mineral scum from the surface with a fine skimmer or spoon periodically. Because of the large volume, watch closely to avoid boil-overs.

    Concentrate to near-syrup

    Continue simmering until the liquid thickens and the temperature approaches 104°C (219°F) at sea level; maple syrup is finished at 66–67% sugar (approximately 7°F/4°C above boiling point of water — actual temperature depends on elevation). Use a reliable candy or syrup thermometer to measure temperature. As the sap nears final concentration, reduce heat and stir gently to avoid burning. Typical reduction from sap to syrup is about 40:1, so 10 L sap will concentrate to roughly 250 mL syrup; adjust volumes accordingly.

    Filter hot

    When the syrup reaches target temperature and visual thickness (coats a spoon and forms a ribbon), remove from heat. Pour the hot syrup through a folded cheesecloth or fine filter into a clean pot to remove 'sugar sand' (niter). Filtering while hot clears out mineral solids more effectively. If needed, repeat filtering as the syrup cools and more sediment becomes visible.

    Measure final density

    If available, verify finished syrup density with a hydrometer or a syrup hydrometer; acceptable finished syrup is 66–67% sugar by weight. If density is low, return to heat and evaporate a little more; if too high, add a small amount of boiled-and-cooled filtered sap and mix.

    Bottle and sterilize

    Ladle hot syrup (hot-packing helps seal and preserve) into sterilized glass bottles or jars leaving about 1/4 inch headspace. Wipe rims, cap tightly, and invert briefly or process in a hot water bath for 10 minutes to ensure a good seal. Allow to cool completely; sealed bottles should store at room temperature for many months. Refrigerate after opening.

    Cleanup

    Clean pots and utensils immediately after pouring with hot water; hardened syrup is sticky and difficult to remove. Soak with hot water to dissolve residues, then wash with dish soap. Dispose of concentrated leftover solids responsibly.
