Vanilla Creemee (Soft-Serve)

    Make the base

    Whisk together 2.5 cups whole milk, 1 cup heavy cream, 1/2 cup granulated sugar, 2 tablespoons liquid nonfat dry milk (if using), 2 tsp vanilla extract and 1/4 tsp salt in a bowl until sugar and dry milk dissolve. Chill the mixture in the refrigerator for at least 2 hours, preferably overnight.

    Churn

    Pour chilled base into an ice cream machine and churn according to manufacturer instructions until it reaches a soft-serve consistency (about 20–30 minutes depending on machine). If you don't have a machine, freeze in a shallow container, stirring vigorously every 20 minutes until smooth and soft.

    Hold

    Keep the soft-serve in the machine hopper or transfer to a chilled container and keep in freezer for up to 1 hour before serving; soften briefly at room temperature if too firm to pipe or scoop.

Marshmallow Sauce

    Warm and thin the fluff

    In a small saucepan over low heat, combine 1 cup marshmallow creme, 2 tbsp unsalted butter and 2 tbsp heavy cream. Stir constantly until the butter melts and the mixture becomes glossy and pourable, about 2–3 minutes. Do not boil.

    Finish

    Remove from heat, whisk in 1/2 tsp vanilla and 1/8 tsp salt. If sauce is too thick, add a teaspoon of cream at a time until it reaches desired consistency. Keep warm or transfer to a squeeze bottle; it will thicken as it cools, reheat gently before using.

Peanut Butter Sauce

    Combine and heat

    In a small saucepan over low heat, combine 3/4 cup creamy peanut butter, 2 tbsp brown sugar, 1 tbsp unsalted butter and 3 tbsp heavy cream. Stir constantly until smooth and slightly warm, about 2–4 minutes. Ensure sugar dissolves and mixture is homogeneous.

    Adjust & finish

    Remove from heat and stir in 1/4 tsp vanilla and 1/8 tsp salt. If the sauce is too thick to drizzle, add cream 1 tsp at a time until pourable. Transfer to a squeeze bottle or small bowl; keep warm or reheat gently before serving.

Assembly & Garnish

    Prepare garnishes

    Toast 1/4 cup chopped peanuts in a dry skillet over medium heat until fragrant and lightly golden, 2–3 minutes, shaking the pan. Cool. If using mini marshmallows, have them ready.

    Assemble Fluffernutter

    Spoon or pipe vanilla creemee into 6 waffle cones or cups (about 1 heaping cup of soft-serve per serving). Drizzle each serving generously with marshmallow sauce (about 2 tbs) and then peanut butter sauce (about 2 tbs), letting sauces swirl into the creemee.

    Finish

    Sprinkle toasted chopped peanuts and a few mini marshmallows on top. Serve immediately while soft-serve is creamy and sauces are slightly warm for best contrast.
