Alternatively, microwave the flour in a microwave-safe bowl for 60–90 seconds, stirring every 30 seconds, until it reaches 165°F (74°C). Let the flour cool completely.

    Cream butter and sugars: In a large mixing bowl, use a hand mixer or stand mixer fitted with the paddle attachment to cream the softened unsalted butter, granulated sugar, and light brown sugar together on medium speed for 2–3 minutes, until light and fluffy.

    Add wet flavoring and liquid: Scrape down the bowl and mix in the vanilla extract and 1 tablespoon milk (or heavy cream) until combined.

    Add salt and flour: With the mixer on low speed, gradually add the cooled, heat-treated flour and 1/4 teaspoon salt. Mix just until incorporated and no streaks of flour remain. The dough should be soft, slightly crumbly but coming together; if too dry, add up to 1 teaspoon more milk.

Mint Flavor & Color

    Add mint extract and color: Stir in 3/4 teaspoon peppermint extract. If you want a pale green hue, add 3–4 drops of green food coloring and fold until evenly tinted. Taste and add an additional 1/4 teaspoon peppermint extract if you prefer a stronger mint profile (use sparingly; mint extract is potent).

Chocolate & Mix-ins

    Fold in chocolate: Gently fold 3/4 cup mini semi-sweet chocolate chips into the dough until distributed evenly. If using chopped white chocolate for marbling, fold it in at this stage as well.

    Portion and chill: Use a tablespoon or small cookie scoop to portion the dough into bite-size rounds on a parchment-lined tray. For a softer scoopable texture, refrigerate the dough for 20–30 minutes. For firmer bites, freeze for 30–60 minutes. Store finished dough bites in an airtight container in the refrigerator for up to 1 week or freeze up to 3 months.
