Break/cool cookies
If using freshly baked cookies, let them cool completely on a wire rack. Place 12 of the cookies on a large cutting board or in a large resealable plastic bag for crushing; reserve 4 cookies whole for garnish or larger chunks.

Crush cookies
Using a rolling pin, the bottom of a heavy glass, or by hand in the bag, crush the 12 cookies to a mix of fine crumbs and small (pea-to-nickel-sized) chunks. Aim for roughly 80% fine crumbs and 20% chunk pieces for texture.

Mix butter and sugar
In a medium bowl, whisk together the melted butter, granulated sugar, and vanilla extract until combined.

Fold in crumbs
Add the crushed cookie crumbs to the butter mixture. Stir with a spatula or fork until the crumbs are evenly moistened and hold together when pressed. If mixture feels too dry, add an additional 1 teaspoon melted butter; if too wet, fold in one of the reserved crushed whole cookies to absorb moisture.

Add chocolate and salt
Fold in the coarsely chopped semi-sweet chocolate and, if using, the sea salt. Reserve a few larger cookie chunks from the reserved whole cookies to press on top for garnish.

Option A - Crushed cookie topping: Use the mixture immediately as a crunchy topping for ice cream, parfaits, or yogurt. Sprinkle evenly and gently press so it adheres. Option B - Pressed mini crusts: Press about 3 tablespoons of the mixture into the bottom of 4 small ramekins or muffin cups to form a compact base. Chill 15–20 minutes to set. Option C - Cookie clusters: Use a spoon to mound portions onto a parchment-lined tray to create clustered bite-sized treats; chill 10 minutes to set.

Garnish & finish
If serving as a topping, drizzle chocolate sauce and add whipped cream or ice cream and fresh berries as desired. For pressed crusts or clusters, top each with a reserved cookie chunk and a light sprinkle of flaky sea salt. Serve immediately for crunch or refrigerate up to 2 days (clusters) / 24 hours (pressed crusts) in an airtight container.

Store leftover crushed cookie mixture in an airtight container at room temperature for up to 3 days for topping use, or in the refrigerator for up to 7 days if the mixture contains added butter and chocolate chunks. Re-crisp briefly in a 300°F (150°C) oven for 5–7 minutes if it softens.
