    Cream the fats and sugars: in a large bowl or the bowl of a stand mixer fitted with the paddle attachment, beat 3/4 cup softened unsalted butter, 1 cup granulated sugar, and 1/2 cup packed light brown sugar on medium speed until light and fluffy, about 2 to 3 minutes.

    Add egg and vanilla: beat in 1 large egg until incorporated, then add 1 teaspoon vanilla extract and mix until smooth.

    Combine wet and dry: with the mixer on low speed, gradually add the dry mixture to the butter mixture until just combined. Do not overmix.

Cream Filling

Assemble & Finish

Pipe or spoon about 1 to 1.5 tablespoons of filling onto the flat side of one cookie, then top with its matching cookie and press gently to spread filling to the edges.
