Prepare oven and pan
Preheat the oven to 350°F (175°C). Line an 8x8-inch (20x20 cm) square baking pan with parchment paper, leaving an overhang on two sides to lift the brownies out later. Lightly butter the exposed pan.

Melt chocolate and butter
In a heatproof bowl set over gently simmering water (double-boiler) or in short bursts in the microwave (20–30 seconds, stirring between), melt the chopped bittersweet chocolate with the butter until smooth. Remove from heat and let cool for 3–5 minutes.

Mix sugars and eggs
Whisk granulated sugar and brown sugar into the slightly cooled chocolate mixture until combined. Add the eggs one at a time, whisking after each until glossy. Stir in vanilla.

Incorporate dry ingredients
Sift together the flour, cocoa powder, salt, and espresso powder into a bowl. Fold the dry mixture into the chocolate mixture with a rubber spatula just until no streaks of flour remain. Do not overmix. Fold in the chopped nuts if using.

Bake
Spread the batter evenly into the prepared pan and smooth the top. Bake in the preheated oven for 22–28 minutes, until the edges are set and a toothpick inserted near the center comes out with a few moist crumbs (not wet batter).

Cut cooled brownies into 4 large squares (or 8 smaller portions if you prefer). If serving warm, rewarm individual squares for 10–12 seconds in the microwave so they are warm but not hot.

Build the sundae
Place one brownie square in each serving bowl or sundae glass. Top each brownie with two scoops of vanilla ice cream (for 4-serving recipe use 4 scoops total as specified), then drizzle about 2 tablespoons of hot fudge sauce over the ice cream and brownie. Add a generous dollop of whipped cream.

Sprinkle each sundae with chopped toasted nuts and a light pinch of flaky sea salt if using. Finish with a maraschino cherry on top.

Serve immediately so the warm brownie contrasts with cold ice cream. Provide spoons and napkins.
