Vanilla Creemee Base

    Mix base

    Combine 2 cups whole milk, 1 cup heavy cream, 1 tablespoon granulated sugar, 2 teaspoons vanilla bean paste (or extract) and 1 teaspoon liquid corn syrup in a medium bowl. Whisk until the sugar is dissolved and mixture is homogeneous.

    Chill

    Cover the bowl and refrigerate the mixture for at least 1 hour, or until thoroughly chilled (better if 2–4 hours). Chilling ensures a denser, creamier creemee.

    Churn

    Pour the chilled mixture into an ice cream machine and churn according to manufacturer instructions until it reaches a soft-serve consistency (usually 20–30 minutes depending on your machine). If you don't have an ice cream maker, pour the mixture into a shallow metal pan and freeze, stirring vigorously every 20–30 minutes until smooth and soft-serve-like (about 2–3 hours).

    While the creemee base is chilling or when the churn is nearly finished, stir 3 tablespoons cookie butter with 1 tablespoon warm milk until it becomes a pourable, ribbon-like consistency. Heat the milk briefly (5–10 seconds) in the microwave or warm on the stove; do not overheat.

    When the creemee reaches soft-serve consistency, transfer a portion into your serving container or piping bag. Spoon or pipe some of the loosened cookie butter in alternating layers with the creemee, finishing with a small amount of creemee on top. Use a skewer or spoon to make gentle figure-eight swirls so the cookie butter forms streaks but doesn't fully incorporate.

Toppings & Finish

    Add crunch

    Sprinkle 1 tablespoon finely crushed Biscoff cookies into the creemee layers as you build them to add integrated crunch.

    Garnish

    On top of the finished creemee, add 1 tablespoon coarse Biscoff cookie crumbles for texture. Warm 1 teaspoon extra cookie butter until liquid and drizzle lightly over the top for shine and extra flavor.

    Serve

    Serve immediately for soft-serve texture. If you prefer a firmer set, place assembled creemee in the freezer for 15–30 minutes, but remove 5 minutes before serving to soften slightly.
