For the dessert garnish

Method

Prepare chilled equipment

  1. 1

    Chill bowl and beaters

Place a mixing bowl and beaters/whisk in the refrigerator for 10–15 minutes before starting. Cold equipment helps the cream whip faster and hold its structure.

Make whipped cream

  1. 2

    Combine ingredients

Pour 1 cup cold heavy cream into the chilled bowl. Add 2 teaspoons powdered sugar and 1 teaspoon vanilla extract. If you want a slightly more stable whipped cream, sprinkle in 1 teaspoon cream of tartar or dissolve 1 teaspoon unflavored gelatin in 1 tablespoon warm water, cool slightly, and add just before whipping.

  2. 3

    Whip to soft/medium peaks

Using an electric mixer on medium speed (or a whisk), beat the mixture until soft to medium peaks form — the cream should hold a rounded peak that gently droops when the beater is lifted. This usually takes 2–4 minutes with an electric mixer and longer by hand. Stop before it becomes grainy or overwhipped.

  3. 4

    Adjust sweetness and texture

Taste a small amount and, if desired, add up to 1 teaspoon more powdered sugar for extra sweetness. If you used gelatin, ensure it remains smooth and not stiff; gently fold once if necessary.

Assemble garnish

  1. 5

    Pipe or spoon

Spoon or pipe dollops of whipped cream onto your dessert (about 1–2 tablespoons per serving). For a neat look, use a pastry bag fitted with a star tip; for a casual look, use a spoon to create a cloud-like scoop.

  2. 6

    Add cherries and finish

Top each whipped cream dollop with one maraschino cherry (6 cherries will garnish 3–6 desserts depending on size; use one cherry per serving). If using lemon zest, sprinkle a small pinch over each dollop to add brightness.

Storage and timing

  1. 7

Whipped cream is best served immediately. If you must store it, keep it covered in the refrigerator and use within 6–12 hours (stabilized cream with gelatin or cream of tartar can last up to 24 hours with minimal weeping). Gently re-whisk briefly if it loses some volume before serving.
