Malted Batter

    Mix dry ingredients

    In a large bowl whisk together the all-purpose flour, malted milk powder, granulated sugar, baking powder, baking soda, and salt until evenly combined and there are no lumps of malt powder.

    Combine wet ingredients

    In a separate medium bowl or large measuring cup whisk together the milk, vanilla extract, egg, and melted butter until fully combined.

    Make the batter

    Pour the wet mixture into the dry ingredients and stir gently with a spatula or whisk until just combined. Do not overmix; some small lumps are fine. Let the batter rest for 5–10 minutes to allow the malt powder to hydrate and baking powder to activate.

    Adjust consistency

    If batter is too thick for your intended use (pancakes, waffles, cakes), thin with up to 2 tablespoons additional milk at a time to reach desired pourable consistency. If too thin, add up to 2 tablespoons flour.

    Preheat pan

    Heat a nonstick skillet or griddle over medium heat and brush with a little melted butter or oil. For pancakes, the surface is ready when a few drops of water sizzle and dance.

    Cook pancakes (if making pancakes)

    Spoon or pour about 1/4 cup batter per pancake onto the hot skillet. Cook until bubbles form across the surface and edges look set, about 2–3 minutes. Flip carefully and cook 1–2 minutes more until golden and cooked through. Repeat with remaining batter, adding a small amount of butter to the skillet as needed.

    Alternative uses

    This malted batter also works for waffles (follow your waffle iron instructions) or as a quick cake layer: pour into a greased 8-inch round pan and bake at 350°F (175°C) for 20–25 minutes or until a toothpick comes out clean.

    Serve warm topped with butter, maple syrup, and sliced fruit. Dust with powdered sugar if desired.
