Prepare & Mix
Chill glass
Place a champagne flute (or coupe) in the freezer or fill it with ice water to chill while you prepare the cocktail.
Combine base ingredients
In a cocktail shaker, add 2 oz gin, 0.75 oz freshly squeezed lemon juice, 0.5 oz simple syrup, and (if using) 1 dash Angostura bitters. Fill the shaker about two-thirds with ice.
Shake
Secure the shaker lid and shake vigorously for 10–15 seconds until the outside of the shaker is cold and slightly frosted. This both chills and lightly dilutes the base.
Strain
Discard ice/water from the chilled flute. Double-strain the shaken mixture into the chilled champagne flute (use a Hawthorne strainer and fine mesh strainer if available) to remove small ice shards and any pulp.
Finish & Serve
Top with sparkling wine
Gently pour 3 oz of cold sparkling wine down the side of the flute so the drink retains as much effervescence as possible. Pouring slowly prevents excessive foaming.
Serve immediately
Serve the Prime 75 right away while the sparkling wine is lively. Recommend one cocktail per person.
