Prepare the glass

Choose a highball or Collins glass (12–14 oz). Run a grapefruit wedge or lime around the rim of the glass to moisten it. Spread the coarse salt on a small plate, then dip the moistened rim into the salt to create an even salted rim. Set the glass aside.

Juice and strain

Freshly squeeze pink or red grapefruit until you have at least 3 oz of juice. Strain the juice through a fine-mesh sieve into a measuring cup to remove pulp and seeds. Squeeze 0.5 oz fresh lime juice and add to the grapefruit juice. Add 0.25 oz agave syrup and stir to combine.

Build the cocktail

Fill the prepared glass about two-thirds full with ice (roughly 1 cup). Pour 2 oz blanco tequila over the ice. Add the grapefruit-lime-agave mixture (about 3.75 oz total). Gently stir 4–6 times to combine and chill.

Top and garnish

Top the drink with 2 oz club soda (or grapefruit soda if you prefer sweeter/fizzy). Give a very gentle stir to incorporate the soda without losing too much fizz. Garnish with a grapefruit wedge or wheel on the rim. Serve immediately.

Notes

Adjust sweetness to taste: increase agave syrup if grapefruit is very tart. For a salt-free version, skip salting the rim. For a fizzy, sweeter Paloma, substitute the club soda with grapefruit soda and reduce the added agave.
