Prepare Espresso & Chill

Brew and cool

Brew a double shot of espresso (about 2 oz) using your espresso machine. Pour the espresso into a small metal or glass container and set aside to cool for 1–2 minutes so it won't melt the ice excessively.

If you prefer a colder drink faster, place the espresso in the freezer for 30–45 seconds or stir gently with a spoon over an ice bath.

Assemble Carajillo

Glass and ice

Fill a rocks glass or short tumbler with 4 large ice cubes.

Add Licor 43

Pour 1.5 oz Licor 43 over the ice.

Sweeten (optional)

If you like a sweeter carajillo, add 0.25 oz simple syrup to the glass and stir once to combine with the liquor.

Add espresso

Slowly pour the cooled double shot of espresso (2 oz) over the back of a spoon onto the Licor 43 to create a layered look, or pour directly and then stir to combine for a uniform iced coffee-cocktail.

Finish & Garnish

Cinnamon

Sprinkle 1 tsp ground cinnamon evenly over the top of the drink. Use less if you prefer a subtler spice (start with 1/4–1/2 tsp).

Garnish

Express a small strip of orange zest over the drink to release oils and drop it in, if using. Garnish with a cinnamon stick for stirring.

Serve immediately with a short spoon or stirrer so the drinker can blend the cinnamon into the drink as desired.
