    Prepare the Filets

    Remove the Nebraska Wagyu filets from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This allows for more even cooking.

    Season the Filets

    Pat the filets dry with paper towels. Rub both sides of each filet with olive oil, then season generously with salt and black pepper.

    Sear the Filets

    Heat a cast-iron skillet over medium-high heat. Once hot, add the filets to the skillet. Sear the filets for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

    Add Aromatics

    During the last minute of cooking, add the rosemary, garlic cloves, and butter to the skillet. Baste the filets with the melted butter and aromatics.

    Rest the Filets

    Remove the filets from the skillet and let them rest on a plate for at least 5 minutes before slicing. This helps the juices redistribute.
