Cocktail

Method

Cocktail

  1. 1

    Prepare shaker

Fill a cocktail shaker halfway with crushed ice to chill.

  2. 2

    Combine ingredients

Add 2 oz vodka, 1 oz light coconut rum, 0.5 oz blue curaçao, 0.75 oz fresh lime juice, 2 oz pineapple juice, 0.5 oz simple syrup, 0.5 oz cream of coconut, and 0.5 oz egg white (if using) into the chilled shaker.

  3. 3

    Dry shake

If using egg white, first dry-shake (no ice) vigorously for 12–15 seconds to emulsify and build froth.

  4. 4

    Wet shake

Add the crushed ice to the shaker (if not already added) and shake vigorously for 10–12 seconds until the outside of the shaker is frosty and the mixture is well-chilled.

  5. 5

    Double strain and serve

Double-strain the cocktail into a chilled Collins or highball glass filled with fresh crushed ice to keep the drink bright and smooth. The blue curaçao will give a pale blue tint; the cream of coconut will soften it to an opaque 'whitehaven' appearance.

Garnish

  1. 6

Thread the pineapple wedge and maraschino cherry onto a cocktail pick and rest on the rim of the glass. Finish with a small sprig of mint tucked beside the fruit.
