Habanero-honey syrup

Prepare syrup
Combine 0.5 cup honey and 0.5 cup water in a small saucepan over medium-low heat. Stir until the honey fully dissolves and the mixture is just warmed (do not boil).

Add the thinly sliced, seeded half habanero to the warm honey-water. Remove from heat and let steep for 20–30 minutes to infuse heat and flavor. Taste after 10–15 minutes; steep longer for more heat.

Strain the syrup through a fine-mesh sieve into a clean container, pressing gently on the peppers to extract liquid but not seeds. Cool to room temperature, then refrigerate. Syrup will keep up to 2 weeks chilled.
Cocktail assembly

Chill a rocks glass by filling it with ice and setting it aside while you mix, or place the glass in the freezer for a few minutes.

If you don't have ready watermelon juice: cube seedless watermelon and puree in a blender, then strain through a fine sieve or cheesecloth to yield about 2 oz juice per cocktail (reserve pulp for another use). Keep juice cold.

In a cocktail shaker, add 1 cup ice, 2 oz mezcal, 2 oz fresh watermelon juice, 0.75 oz fresh lime juice, and 0.5 oz habanero-honey syrup.

Shake vigorously for 10–15 seconds until the shaker is frosty and well-chilled.

Dump the ice from the chilled rocks glass. Strain the cocktail over a large fresh ice cube or fill the glass with fresh ice, depending on preference.

Garnish with a small watermelon wedge on the rim, a lime wheel on the side, and an optional micro cilantro or mint sprig for aroma.

Serve immediately. Note: adjust habanero-honey syrup amount to taste — start with 0.25 oz for milder heat or up to 0.75–1 oz for more spice.
