Prepare glass
If serving chilled without ice, place a coupe or coupe-style cocktail glass in the freezer for 5–10 minutes. Otherwise, fill the glass with ice and set aside to chill while you build the cocktail.

Dry shake (if using egg white)
Add the tequila, orange liqueur, fresh lime juice, agave nectar, Aztec chocolate bitters, orange bitters, and egg white (if using) to a cocktail shaker. Close and shake vigorously without ice for 15–20 seconds to emulsify and create a silky foam.

Wet shake
Open the shaker, add ice (about 1 cup or enough to nearly fill the shaker), close and shake hard for 12–15 seconds until the outside of the shaker frosts, chilling and diluting the drink properly.

Strain
Double-strain the cocktail into the chilled coupe or a rocks glass (if serving on the rocks) using a Hawthorne strainer and a fine-mesh strainer to remove ice shards and produce a smooth texture.

Finish
Express the oils of an orange twist over the surface of the cocktail by holding the twist skin-side down 2–3 inches above the drink and giving it a sharp fold. Run the twist around the rim and drop it into the cocktail.

If desired, lightly grate a small amount (about 1 teaspoon) of chili-spiced Aztec chocolate or sprinkle cacao nibs over the foam for aroma and a hint of texture. Serve immediately.
