Strawberry Flambé

Prepare strawberries
Rinse the strawberries and hull them. Slice larger berries into halves or quarters so pieces are roughly uniform and total about 1 lb after trimming.

Cook fruit
In a 12-inch sauté pan over medium heat, melt 2 tbs unsalted butter. Add 3 tbs granulated sugar and cook, stirring, until sugar dissolves and begins to bubble (about 1–2 minutes). Add the sliced strawberries and 1 tbs fresh lemon juice. Stir to coat and cook for 2–3 minutes until berries start to soften and release juices.

Add liqueur and warm
Stir in 2 tbs orange liqueur and let it warm for about 20–30 seconds so alcohol heats but does not yet flame. Sprinkle 1 tsp freshly ground black pepper over the berries and gently stir to combine.

Flambé
Remove the pan from the heat for safety for 5 seconds, then return it to low heat and pour 2 tbs dark rum carefully over the berries. Tilt the pan slightly away from you and, using a long match or long lighter, ignite the rum surface to flambé. Allow flames to burn off (about 10–20 seconds). If flames do not catch safely, immediately return pan to low heat and simmer 30–60 seconds until alcohol smell diminishes. Once flames subside, carefully scrape pan juices over berries.

Toast cake
Heat a separate large skillet over medium heat. Add 2 tbs unsalted butter and let it foam. Add the pound cake slices in a single layer and toast 2–3 minutes per side until golden brown and slightly crisp at the edges. Alternatively, grill or broil slices for 1–2 minutes per side. Keep warm on a rack or low oven (200°F / 95°C).
Garnish & Plating

Portioning: Place one toasted pound cake slice on each of six dessert plates (recipe makes 6 servings). Spoon generous portions of the warm flambéed strawberries and sauce over each slice, letting some sauce pool on the plate.

Add cream: Top each shortcake with about 2–3 tablespoons of vanilla ice cream or a dollop of whipped cream, as preferred.

Garnish and serve: Tuck two fresh mint leaves beside the cream on each plate and dust lightly with powdered sugar if using. Serve immediately while strawberries and cake are warm so the ice cream softens slightly and flavors combine.
