Prepare cocktail

Build and stir
Add 1 oz Old Forester bourbon, 1 oz Blackland bourbon, 0.5 oz demerara syrup and 2 dashes Angostura bitters into a mixing glass. Fill the mixing glass with ice and stir briskly for 20–30 seconds until the mixture is well-chilled and slightly diluted (about 15–20% dilution).

Strain
Strain the stirred cocktail through a julep/ Hawthorne strainer into an old-fashioned glass over a single large ice cube or sphere.

Express garnish
Take the orange peel and hold it skin-side down over the glass. Give it a firm twist to express the oils over the cocktail, then rub the rim with the peel and drop it into the drink as garnish.
Smoke finish

Prepare smoker
Place about 1 tablespoon of applewood chips in a smoking tin, small metal bowl, or on a piece of foil. Ignite the chips with a torch or stove flame until they begin to smolder and produce smoke (flame should be blown out once chips are glowing/smoldering).

Trap smoke
Immediately invert a mixing glass, cloche, or a metal or heatproof bowl over the old-fashioned glass to trap the smoke. Leave the smoke trapped for 20–30 seconds to impart a light smoky aroma into the cocktail.

Unveil and serve
Carefully remove the cover, allowing a small cloud of smoke to escape, then serve the cocktail immediately. The smoke will marry with the bourbons and demerara for a rounded, smoky Old-Fashioned style drink.
