Charcuterie

Method

Charcuterie

  1. 1

    Prepare cooked sausages

If your mild Italian sausage or smoked sausage is raw, cook it first: heat a skillet over medium heat with 1 teaspoon oil, sear sausage until browned on all sides, then reduce heat and cook through (internal temp 160°F/71°C for pork). Let rest 5 minutes and slice 1/4‑inch thick. If using pre-cooked or cured meats (soppressata, salami, prosciutto), simply separate slices and arrange.

  2. 2

Arrange each type of meat in its own small pile or fan them around the board so flavors are distinct and easy to pick up. Fold prosciutto into loose ribbons for height and texture.

Cheeses

  1. 3

Remove soft cheeses (brie, goat cheese) from refrigerator 30–60 minutes before serving so they come to room temperature for best flavor and spreadability.

  2. 4

Pre-cut harder cheeses (cheddar, Manchego) into bite-sized slices or cubes, leaving one wedge or chunk intact for visual appeal. Place cheeses on the board with some space between them to allow for accompaniments.

  3. 5

If using a whole brie wheel, score the top lightly or cut into wedges just before serving so it maintains shape.

Accompaniments

  1. 6

Slice the baguette into thin rounds and, if desired, lightly toast in a 400°F (200°C) oven for 5–7 minutes until just crisp. Let cool.

  2. 7

Place small bowls or ramekins on the board and fill one with honey, one with whole-grain mustard, and another with olives or marinated items (cornichons). Spoon fig jam or onion marmalade into a small dish if using.

  3. 8

Scatter dried fruit, nuts, and grapes around cheeses and meats to create color and to provide palate contrasts. Keep sticky items (honey, jam) near softer cheeses for easy pairing.

  4. 9

Arrange crackers in small stacks or fan them along one side of the board so guests can easily grab them without disturbing arranged items.

  5. 10

Tuck sprigs of rosemary or thyme between groupings for aroma and garnish.

Assembly

  1. 11

Choose a large wooden board or platter. Start by placing the cheese pieces first in a triangle or evenly spaced pattern to form anchors for the board.

  2. 12

Add the bowls/ramekins with honey, mustard, and olives next to cheeses where they will be used (honey near brie/goat cheese, mustard near cheddar/salami).

  3. 13

Place meat selections around and between the cheeses, creating visual layers and easy access. Fan or fold slices so guests can pick them up easily.

  4. 14

Fill in gaps with crackers, baguette slices, grapes, dried fruit, and nuts. Keep items that crumb or are messy at the board’s edge (crackers) and sticky items slightly inset to avoid cross-contamination.

  5. 15

Finish by drizzling a little honey over the brie wedge if desired and placing any optional hot honey or chili oil in a tiny spoon for adventurous guests.

  6. 16

Provide cheese knives (a soft cheese spreader, a hard cheese knife) and small spoons for condiments, and toothpicks for picking up meats or olives.

Serving & storage

  1. 17

Serve immediately after assembly. If not serving right away, cover loosely with plastic wrap and keep at cool room temperature for up to 2 hours. Refrigerate leftovers within 2 hours; store meats and cheeses separately in airtight containers for up to 3–5 days depending on type.
