Method

Cocktail

  1. 1

    Prepare and shake

Chill a coupe or small cocktail glass by filling it with ice and setting it aside. In a cocktail shaker, add sambuca, vodka (if using), fresh lemon juice, simple syrup, and egg white (if using). Do a dry shake (no ice) vigorously for 12–15 seconds to emulsify the egg white and create foam.

  2. 2

    Shake with ice

Add the ice to the shaker and shake again vigorously for 10–15 seconds until the shaker is cold to the touch and the mixture is well chilled.

  3. 3

    Strain

Discard ice from the chilled glass. Double-strain the cocktail into the chilled glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and ensure a silky texture.

Garnish & Finish

  1. 4

Float three coffee beans gently on the foam or surface of the drink. Express a lemon twist over the glass to release oils, wipe the rim with the twist, and rest it on the glass as a garnish.

  2. 5

Serve immediately. The sambuca provides anise-forward flavor; the lemon brightens it and the egg white (if used) adds a silky mouthfeel and a platform for the coffee bean garnish.
