Prepare octopus
If using pre-cooked octopus: rinse under cold water and pat dry, then slice into 1 cm rounds or bite-sized pieces and set aside. If using raw octopus: bring 2 liters of water to a gentle boil with white wine (if using), bay leaves, peppercorns and 1 tbsp coarse salt.

Tenderize and simmer (raw octopus)
Grip the octopus by the head and dip the tentacles in boiling water three times (this helps curl the tips), then fully submerge. Reduce to a gentle simmer, cover partially, and cook until tender when pierced with a skewer — about 35–50 minutes depending on size (1 kg typically ~40 minutes). Start checking at 30 minutes. Remove from liquid and let cool in its own cooking liquid for 15 minutes to retain moisture. Once cool enough, slice into 1 cm rounds or bite-sized pieces.

If you prefer extra tender texture, after cooking cool the octopus fully, then refrigerate for at least 2 hours before slicing.

Make the citrus marinade
In a bowl whisk together lime juice, lemon juice, orange juice (if using), extra-virgin olive oil, sea salt, black pepper and grated garlic until salt dissolves. Taste and adjust acidity/salt—marinade should be bright and slightly salty so it seasons the octopus.

Marinate octopus
Place sliced octopus in a shallow glass or nonreactive container. Pour the citrus marinade over the octopus so it's largely submerged. Cover and refrigerate for 20–30 minutes to allow flavors to penetrate. Do not marinate for longer than 1 hour, as citrus will begin to overly firm the octopus slices.

Prepare vegetables
While octopus marinates, finely dice red and yellow bell peppers into 3–4 mm pieces. Finely dice the red onion and soak in cold water for 5 minutes to mellow sharpness, then drain well. Remove seeds from the serrano and finely mince (keep seeds if you want more heat). Dice the avocado into 8 mm cubes and toss immediately with a teaspoon of lime juice to prevent browning. Chop cilantro leaves coarsely.

Combine ceviche components
After octopus has marinated 20–30 minutes, drain off about half the marinade (reserve a few tablespoons). In a large bowl gently fold together the marinated octopus, diced bell peppers, red onion, minced serrano, and most of the chopped cilantro. Add the reserved marinade and the olive oil drizzle if the mixture seems dry. Fold in avocado last so it remains intact.

Season and rest
Taste for salt, acid and heat—adjust with a little sea salt, a splash of lime juice, or extra minced serrano. Let the combined ceviche rest chilled for 5–10 minutes to allow flavors to marry, but serve soon so avocado stays fresh.

Plate and garnish
Spoon ceviche into chilled bowls or onto a platter. Drizzle with a teaspoon of extra virgin olive oil, sprinkle smoked paprika lightly if desired, finish with a crack of black pepper and garnish with microgreens or cilantro sprigs.
