Rim & Garnish

    Prepare rim

    Place the chili-lime salt on a small plate. Run the lime wedge around the outer rim of a highball or Collins glass, then dip the rim into the chili-lime salt to coat. Set glass aside.

    Prep garnish

    Reserve the lime wedge and set aside the mint sprig and orange wheel. If using a fresh passion fruit, scoop out 1/2 teaspoon of seeds/pulp to float on top at the end.

Cocktail

    Fill a cocktail shaker with ice (about 3/4 full). Add tequila blanco (2 oz), fresh lime juice (0.75 oz), passion fruit puree (1 oz), fresh orange juice (1 oz), and simple syrup (0.5 oz).

    Shake vigorously for 10–12 seconds until well chilled and slightly frothy.

    Fill the prepared glass with fresh ice (or keep the ice in glass if serving on the rocks). Double-strain the shaken mix into the glass to remove ice shards and pulp, leaving room for soda (about 1/2 to 1 inch).

    Top gently with club soda (2 oz) to create a light fizz. Stir once gently with a bar spoon to integrate.

    Float the reserved passion fruit seeds (if using) on top. Garnish with the mint sprig (slap briefly between hands to release aromatics), place the orange wheel on the rim, and tuck the lime wedge on the glass edge.

    Serve immediately with a straw. Suggestion: For a slightly smokier note, use a reposado tequila instead of blanco.
