Lavender Simple Syrup

    Combine and heat

    In a small saucepan combine 1 cup water and 1 cup granulated sugar. Add 2 tablespoons dried culinary lavender. Stir to combine.

    Simmer

    Place the saucepan over medium heat and bring to a gentle simmer, stirring occasionally to fully dissolve the sugar. Once simmering, reduce heat to low and let steep for 5 minutes—do not boil vigorously, just maintain a gentle simmer.

    Cool and strain

    Remove the saucepan from heat and let the syrup steep off the heat for an additional 10 minutes to deepen the lavender flavor. Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof container, pressing on the solids to extract liquid. Discard solids. Cool syrup to room temperature, then refrigerate until cold. (Will keep refrigerated for up to 2 weeks.)

Assemble the Lilac Libation

    Prepare glass

    Fill a Collins or highball glass with about 1 cup of ice.

    Add citrus and syrup

    Pour 1 ounce fresh lemon juice and 1/2 ounce chilled lavender simple syrup over the ice.

    Top with sparkling

    Add 4 ounces chilled Topo Chico to the glass. Gently stir once to combine lemon and syrup with the mineral water.

    Float ginger beer

    Carefully pour 2 ounces chilled ginger beer over the top to add a gingery bite and light fizz contrast. Give a gentle short stir (1–2 turns) to create a layered effervescence without flattening the carbonation.

    Garnish and serve

    Garnish with a lemon wheel and a sprig of fresh lavender if available. Serve immediately with a straw. Taste and, if you prefer it sweeter, add an additional 1/4 ounce lavender simple syrup; for more tartness add 1/4 ounce lemon juice.
