Caramel rim (optional)
If using a caramel sugar rim, lightly wet the outer edge of a chilled coupe or martini glass with a small amount of lime juice or caramel syrup. Dip the rim into a shallow dish of caramelized sugar (or caramel syrup mixed with granulated sugar) to coat. Set the glass in the freezer to chill while you make the cocktail.

Dry shake
In a cocktail shaker, add the Stoli Vanil (2 oz), amontillado sherry (0.5 oz), passion fruit purée (1 oz), caramel syrup (0.5 oz), fresh lime juice (0.5 oz) and aquafaba (0.75 oz). Do NOT add ice yet. Seal the shaker and shake vigorously for 20–30 seconds to emulsify the aquafaba and build a rich foam.

Wet shake
Open the shaker and add a generous scoop of ice (about 1 cup). Seal and shake vigorously for another 15–20 seconds until the shaker is thoroughly chilled (cold to the touch) and the foam has become dense and silky.
Strain & Finish

Double-strain the cocktail into the chilled coupe/martini glass using a Hawthorne and fine mesh strainer to remove ice shards and ensure a smooth texture. Pour gently so the foam settles on top.

Carefully spoon or sprinkle a small amount of edible gold flakes (about 0.1 tsp) onto the foam for the 'golden' effect, or place half a passion fruit on the rim or float a thin wheel in the foam for garnish. If you used a caramel rim, be mindful when placing garnish so the rim remains intact.
