    Prepare honey syrup (if not using ready-made)

    Combine equal parts honey and hot water (for example 1/4 cup honey + 1/4 cup hot water). Stir until fully dissolved, cool before using. Store any leftover in refrigerator.

    Dry shake (if using egg white)

    Add Hendrick's gin, Aperol, fresh lemon juice, honey syrup, passionfruit syrup and egg white into a cocktail shaker. Seal and shake vigorously without ice for 15 seconds to emulsify and create foam.

    Wet shake

    Add a generous scoop of ice to the shaker (about 1 cup). Shake vigorously for 12–18 seconds until the shaker is cold to the touch and properly diluted.

    Double strain and serve

    Double-strain the cocktail into a chilled coupe or Nick & Nora glass (or over fresh large ice in a rocks glass if preferred) to remove ice shards and any coagulated egg bits. The resulting drink should be pale, slightly rosy, and silky if egg white was used.

Garnish & Finish

    Float half a teaspoon of passionfruit seeds or spoon 1/2 teaspoon of passionfruit pulp on top of the foam to add aroma and visual contrast.

    Express the lemon twist over the drink to release oils, rim the glass lightly with the twist, then drop the twist into the drink or place a thin lemon wheel on the rim.

    Serve immediately. Recommend serving chilled with a small straw if served in a rocks glass.
