Prepare glass
Chill a coupe or rocks glass by filling with ice and cold water while you mix the cocktail (about 3–5 minutes).

Dry shake (if using egg white)
If using egg white, add vodka, limoncello, lemon juice, simple syrup and the egg white to a cocktail shaker. Secure the lid and shake vigorously without ice for 15 seconds to emulsify and create a silky foam.

Shake with ice
Add plenty of ice to the shaker (about 3/4 full). Shake hard for 12–15 seconds until the exterior of the shaker is very cold (or 10–12 seconds if you did not dry shake).

Double strain
Discard the ice and water from the chilled glass. Double-strain the cocktail into the chilled coupe or a rocks glass over fresh large ice (if you prefer it on the rocks) using a fine mesh strainer to remove small ice shards and any egg white solids. If you prefer a taller, lightly effervescent drink, pour into a highball with fresh ice and proceed to next step.

Top with sparkle
Gently top the cocktail with about 1 oz sparkling water or club soda to add lift and a light effervescence. Pour slowly over the back of a spoon to preserve the foam if you used egg white.

If using candied lemon slice, place it on the rim or float it on top. Lightly clap the mint between your palms to release aroma and tuck it beside the garnish.
