Prepare Base & Serving

    Chill and set up serving

    Place a shallow serving bowl on a bed of crushed ice to keep the caviar cold. Keep the caviar tin refrigerated until just before plating. Use a nonreactive spoon (mother‑of‑pearl, bone, or plastic) to transfer caviar — avoid metal spoons which can alter flavor.

    Toast blini or brioche

    If using blini: warm them gently in a dry skillet over low heat for 30–60 seconds per side until slightly puffed and warm. If using brioche: slice small rounds, lightly butter both sides with room‑temperature unsalted butter, and toast in a skillet or oven until golden (about 1–2 minutes per side in skillet, or 4–6 minutes at 375°F / 190°C). Keep warm under a towel.

Prepare Accompaniments

    Prepare crème fraîche and garnishes

    Portion 4 teaspoons of crème fraîche into a small bowl. Finely chop shallot, chives, and the optional hard‑boiled egg components and place separately in small ramekins. Rinse and drain the capers and pat dry.

    Cut lemon

    Cut the lemon into 2–4 wedges to offer guests small squeezes; do not pre‑squeeze over the caviar — a light touch of lemon can brighten, but too much will overpower the eggs.

Plating & Serving Caviar

    Transfer caviar to serving bowl

    Open the chilled caviar tin and, using the nonreactive spoon, gently transfer the beluga caviar to a small chilled serving dish set over the crushed ice. Use gentle scoops to preserve the eggs' integrity — do not press or mash.

    Arrange accompaniments

    Arrange warm blini or toasted brioche on a platter next to the caviar. Place small bowls of crème fraîche, chopped shallot, chives, capers, optional chopped egg whites and yolks, lemon wedges, and a small dish of sea salt flakes and freshly ground pepper beside the caviar so guests can assemble their bites.

    How to assemble

    Spread a light layer (about 1 teaspoon) of crème fraîche on a blini or brioche round, add a small pinch of chopped shallot or egg white if desired, then gently spoon 5–10 grams (roughly 1/3–1/2 teaspoon) of beluga caviar on top. Finish with a few chopped chives, a tiny pinch of capers or egg yolk if using, and a barely perceptible sprinkle of sea salt or a twist of pepper. Offer lemon cautiously — one light squeeze per bite at guest discretion.

    Serving notes

    Keep the caviar chilled during service by returning the tin to the ice bed between helpings. Do not leave caviar at room temperature for more than 30 minutes at a time. Use only nonreactive utensils and avoid strong flavors (garlic, raw onion, heavy sauces) that will mask the delicate flavor of beluga caviar.
