Chop the Vegetables
Finely chop the broccoli, onion, tomato, and roasted red peppers. Ensure the broccoli is in small pieces for even cooking.

Prepare the Eggs
In a mixing bowl, crack the 4 eggs and whisk them together until the yolks and whites are fully combined. Add salt and black pepper to taste.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and sauté until they become translucent, about 3-4 minutes. Then, add the broccoli and continue to cook for another 2-3 minutes.

Add Remaining Veggies
Stir in the roasted red peppers and tomatoes, cooking for an additional 2-3 minutes until all vegetables are tender. Finally, add the baby spinach and cook until wilted, about 1 minute.

Add Cheese and Fold
Sprinkle the cheddar jack cheese evenly over the eggs and vegetables. Once the cheese starts to melt, gently fold the omelet in half using a spatula. Cook for another 1-2 minutes until the omelet is fully set.
