Preparing the Burger Patties

    Mash the Black Beans

    In a large mixing bowl, mash the canned black beans with a fork or a potato masher until mostly smooth, leaving some chunks for texture.

    Combine Ingredients

    Add the cooked quinoa, chopped bell pepper, chopped onion, chili powder, cumin, garlic powder, salt, black pepper, breadcrumbs, and egg to the mashed black beans. Mix well until all ingredients are combined.

    Form Patties

    Using your hands, form the mixture into burger patties, about 4-5 patties depending on your desired thickness.

    Cook the Patties

    Heat a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.

Preparing the Toppings

    Prepare the Lettuce

    Wash and dry the lettuce leaves. Set aside.

    Slice the Avocado

    Cut the avocado in half, remove the pit, and slice it thinly.

    Make the Sweet & Spicy Mayo

    In a small bowl, mix together the mayonnaise and sriracha sauce to create the sweet & spicy mayo.

Assembling the Burger

    Assemble the Burger

    On a serving plate, place a lettuce leaf down first, then add the cooked black bean patty, top it with sliced avocado, a generous spoonful of pico de gallo, and drizzle with the sweet & spicy mayo.

    Serve

    Serve the veggie burger immediately with your choice of sides.
