Wash and chop the broccoli into small florets. Dice the onion and halve the cherry tomatoes. If using jarred roasted red peppers, drain and chop them into bite-sized pieces.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and sauté for about 3-4 minutes until they become translucent.

Incorporate Roasted Red Peppers and Tomatoes
Stir in the roasted red peppers and halved cherry tomatoes, and cook for an additional 2-3 minutes until everything is heated through.

Add Cheese
Remove the skillet from heat and sprinkle the shredded cheddar jack cheese evenly over the vegetable mixture. Let it sit for a minute to allow the cheese to melt.
