Burger Preparation

Prepare the Ground Beef
In a mixing bowl, season the ground beef with salt and pepper. Shape it into two patties.

Add Cheese
During the last minute of cooking, place a slice of pepper jack cheese on each patty and cover to melt.

Toast the Buns
While the patties are cooking, cut the hamburger buns in half and toast them on the grill or in a toaster until golden brown.

Slice the Jalapeños
Remove the stems and seeds from the jalapeños, then slice them into thin rings.

Prepare the Batter
In a bowl, mix the all-purpose flour, cornstarch, and water until smooth.

Heat the Oil
In a deep pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Jalapeños
Dip the jalapeño rings into the batter, then carefully place them in the hot oil. Fry for about 2-3 minutes or until golden and crispy. Remove and drain on paper towels.

Mix the Spicy Mayo
In a small bowl, combine the mayonnaise, sriracha, and lime juice. Stir until well mixed.
Assemble the Burger

Layer the Ingredients
On the bottom half of each toasted bun, place the lettuce leaf, followed by the cheese-topped patty. Add tomato slices and a generous amount of fried jalapeños. Drizzle with spicy mayo.

Place the top half of the bun on and serve immediately.
