Burger Preparation

    Prepare the Burger Patties

    In a mixing bowl, combine the ground beef with salt and pepper. Form the mixture into two equal patties.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood bacon until crispy. Remove from the skillet and let drain on paper towels.

    Grill the Patties

    On a grill or skillet over medium-high heat, cook the burger patties for about 4-5 minutes on each side, or until the desired doneness. In the last minute of cooking, place a slice of smoked cheddar cheese on each patty to melt.

    Toast the Buns

    While the burgers are cooking, lightly toast the burger buns on the grill or in a toaster.

    Assemble the Burger

    Spread 2 tablespoons of Sweet Baby Ray's BBQ sauce on the bottom half of each toasted bun. Place the burger patty with melted cheese on top, followed by two slices of crispy bacon. Top with the other half of the bun.

    Slice the Onion

    Peel the onion and slice it into 1/4 inch thick rings. Separate the rings and set aside.

    Prepare the Batter

    In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold water until you reach a smooth batter consistency.

    Heat the Oil

    In a deep pot, heat the vegetable oil over medium-high heat until it reaches 365°F (185°C).

    Fry the Onion Rings

    Dip each onion ring into the batter, allowing excess to drip off, then carefully place it in the hot oil. Fry in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
