    Thoroughly wash the russet potatoes under cold water to remove any dirt. Pat them dry with a clean kitchen towel. Cut each potato into even strips, about 1/4 inch thick, to ensure even cooking.

    Place the cut potato strips in a large bowl of cold water. Let them soak for at least 30 minutes. This step helps to remove excess starch, resulting in crispier fries.

Frying the Fries

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of potato into it; if it sizzles and bubbles, the oil is hot enough.

    Dry and Fry Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels. This is important to prevent oil splatter. Carefully add a batch of potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 4-5 minutes or until they are golden brown.

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb excess oil. Immediately sprinkle with salt, black pepper, and garlic powder to taste while they are still hot.
