    Prepare the Potatoes

    Wash and peel the Russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes thinly (about 1/8 inch thick) for even cooking.

    Soak the Potatoes

    Place the sliced potatoes in a bowl of cold water for at least 30 minutes to remove excess starch. This will help them become crispier when fried.

    Heat the Oil

    In a large, deep skillet or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

    Fry the Chips

    Carefully add the dried potato slices to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-5 minutes or until golden and crispy.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with sea salt, paprika, garlic powder, and onion powder to taste.

    In a small bowl, combine the sour cream, chopped fresh chives, and lemon juice. Stir well until all ingredients are mixed thoroughly.
