Omelet Filling

Burrito Assembly

Method

Prepare Omelet Filling

  1. 1

    Cook the Meats

In a skillet over medium heat, cook the chorizo and sausage until browned, about 5-7 minutes. Drain excess fat.

  2. 2

    Add Chicken

Add the grilled chicken to the skillet with the chorizo and sausage. Stir to combine and heat through for another 2-3 minutes.

  3. 3

    Prepare the Eggs

In a bowl, whisk the eggs with salt and pepper until well combined.

  4. 4

    Cook the Eggs

Pour the egg mixture into the skillet with the meats. Cook on medium heat, gently stirring until the eggs are just set, about 3-4 minutes.

  5. 5

    Add Cheese

Sprinkle cheddar jack cheese on top of the cooked eggs and cover the skillet. Let sit for 1-2 minutes until the cheese melts.

Assemble Burrito

  1. 6

    Prepare Tortillas

Warm the flour tortillas in a dry skillet or microwave until soft and pliable.

  2. 7

    Prepare Avocado

Slice the avocado in half, remove the pit, and scoop the flesh out. Slice into thin pieces.

  3. 8

    Fill Tortillas

Place a generous portion of the omelet filling on each tortilla. Top with sliced avocado and drizzle Santa Cruz sauce on top.

  4. 9

    Roll Burrito

Fold in the sides of the tortilla and then roll from the bottom up to enclose the filling. Repeat for the second tortilla.

  5. 10

    Serve

Cut the burritos in half and serve warm with additional Santa Cruz sauce on the side, if desired.
