Preparation

    Prepare the Corned Beef

    If using pre-cooked corned beef, slice it thinly. If using uncooked corned beef, cure it in-house according to your preferred recipe.

    Prepare the Chow Chow

    Ensure Josie's Chow Chow is ready to use. You may make it ahead of time or use store-bought.

Building the Sandwich

    Layer the Ingredients

    On two slices of marble rye bread, layer the sliced corned beef, followed by one slice of Swiss cheese. Top with a generous spoonful of Josie's Chow Chow and another slice of Swiss cheese. Place another slice of marble rye on top to complete the sandwich.

Grilling

    Butter the Bread

    Spread one tablespoon of unsalted butter on the outer side of each sandwich.

    Grill the Sandwich

    In a skillet over medium heat, place the sandwich butter-side down. Grill until golden brown, about 3-4 minutes. Flip the sandwich, add the remaining butter to the skillet, and grill the other side until golden brown and the cheese is melted, about another 3-4 minutes.

Serving

    Slice and Serve

    Once grilled, remove the sandwich from the skillet and let it sit for a minute. Slice in half and serve with a side of Thousand Island dressing for dipping.
