    Cook the Meats

    In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside, then cook the sausage links until browned and cooked through. Slice the sausage into bite-sized pieces and set aside with the bacon.

    In the same skillet, drain excess fat if necessary, and add diced onions. Sauté until translucent, about 3-4 minutes. Add the baby spinach, roasted red peppers, and diced tomatoes, cooking until the spinach is wilted.

    Prepare the Eggs

    In a mixing bowl, beat the eggs with salt and black pepper until well combined.

    Combine Ingredients

    Add the cooked bacon and sausage pieces to the sautéed vegetables in the skillet. Mix well to combine.

    Add Eggs

    Pour the beaten eggs over the mixture in the skillet, ensuring even coverage. Let cook undisturbed for 2-3 minutes until the edges start to set.

    Add Cheese and Finish Cooking

    Sprinkle smoked cheddar cheese over the top of the omelet. Continue cooking for another 2-3 minutes until the eggs are fully set and the cheese is melted.
