Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and drain on paper towels.

Prepare the Sausage
In the same skillet, remove excess bacon fat, leaving about 1 tablespoon. Add the sausage, breaking it up with a spatula, and cook until browned and cooked through, about 5-7 minutes.

Add Vegetables
Stir in the baby spinach, roasted red peppers, diced tomatoes, and banana peppers. Cook until the spinach is wilted, about 2-3 minutes.

Combine Ingredients
Crumble the cooked bacon into the skillet and mix well with the sausage and vegetables. Sprinkle the smoked cheddar cheese over the top and let it melt.
Toast and Serve

Toast the Bread
While the mixture is cooking, toast the slices of bread until golden brown.

Plate the Dish
Serve the sausage and vegetable mixture on a plate with the side of choice and the toast on the side.
