    Prepare the Vegetables

    Dice the onion, chop the tomatoes, and slice the roasted red peppers and banana peppers into bite-sized pieces. Set aside.

    Cook the Meats

    In a large skillet over medium heat, cook the bacon until crispy. Remove from the skillet and let it drain on paper towels. In the same skillet, add the sausage, breaking it apart with a spatula, and cook until browned and fully cooked. Remove from the skillet and drain excess grease.

    Sauté the Onions

    In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent.

    Add Spinach and Peppers

    Add the baby spinach, roasted red peppers, and banana peppers to the skillet. Cook for another 2-3 minutes until the spinach has wilted.

    Combine Ingredients

    Return the cooked bacon and sausage to the skillet. Stir everything together until well mixed.

    Add Tomatoes and Cheese

    Add the chopped tomatoes and smoked cheddar cheese to the skillet. Stir until the cheese is melted and everything is heated through.

Serving

    Spoon the mixture onto plates and serve hot as a hearty breakfast or brunch dish.
