Method

Preparing the Grouper Fingers

    Cut and Prepare the Fish

    Cut the grouper fillets into finger-sized strips, about 1 inch wide.

    Set Up Breading Station

    In three separate bowls, place the flour, whisked eggs mixed with milk, and a mixture of cornmeal, salt, and pepper.

    Coat the Fish

    Dredge each grouper strip first in flour, then dip into the egg mixture, and finally coat with the cornmeal mixture.

    Heat the Oil

    In a large frying pan, heat vegetable oil over medium-high heat until hot. Test the oil by dropping in a small piece of bread; it should sizzle.

    Fry the Grouper Fingers

    Carefully place the coated grouper fingers in the hot oil. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Making the Mustard Sauce

    In a bowl, mix together the Dijon mustard, mayonnaise, lemon juice, honey, and garlic powder until smooth.
