    Cook the Bacon

    In a skillet over medium heat, cook the pecan wood bacon until crispy. Remove from skillet, drain on paper towels, and chop into bite-sized pieces.

    Prep the Onion Rings

    Slice the onion into thick rings. Set up a breading station with flour, milk, and breadcrumbs in separate bowls. Dip each onion ring into flour, then milk, and finally coat with breadcrumbs.

Frying Onion Rings

    Fry the Onion Rings

    Heat oil in a deep frying pan over medium-high heat. Once hot, carefully add the breaded onion rings in batches. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Grilling Lettuce

    Prepare the Lettuce

    Cut the iceberg lettuce into quarters, leaving the core intact. Brush the cut sides lightly with olive oil and season with salt and pepper.

    Grill the Lettuce

    Preheat a grill to medium heat. Place the lettuce quarters cut-side down on the grill. Grill for about 2-3 minutes, until charred and slightly wilted. Flip and grill for another 1-2 minutes.

Assembly

    Place the grilled lettuce on a serving platter. Top with chopped bacon, bleu cheese crumbles, and halved cherry tomatoes. Finish with fried onion rings on top for crunch.
