Pimento Cheese Spread Preparation

    Mix Ingredients

    In a large mixing bowl, combine the shredded sharp cheddar cheese, softened cream cheese, mayonnaise, diced pimentos, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are fully incorporated and the mixture is smooth.

    Chill the Spread

    Cover the bowl with plastic wrap or transfer the mixture to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.

Grilled Sandwich Assembly

    Assemble Sandwiches

    Spread a generous amount of the prepared pimento cheese mixture on one side of each slice of white bread. Place the sliced tomatoes on top of the pimento cheese on half of the slices, then top with the remaining slices of bread, cheese side down.

    Butter the Bread

    Spread softened unsalted butter on the outer sides of each sandwich.

    Grill the Sandwiches

    Preheat a skillet or griddle over medium heat. Place the sandwiches in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cheese is melted.

    Once grilled, remove the sandwiches from the skillet, cut in half if desired, and serve immediately with extra tomato slices on the side.
