Prepare the Chicken

Marinate the Chicken
In a bowl, combine the olive oil, salt, black pepper, and garlic powder. Add the chicken breasts and coat them evenly with the marinade. Let them marinate for at least 30 minutes.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Once hot, place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

Wash and Chop Vegetables
While the chicken is grilling, wash the mixed greens, cherry tomatoes, cucumber, and red onion. Chop the cucumber and slice the red onion thinly.

Combine Salad Ingredients
In a large salad bowl, combine the mixed greens, cherry tomatoes, chopped cucumber, and sliced red onion.
Make the Dressing

Mix the Dressing
In a small bowl, whisk together the honey, Dijon mustard, apple cider vinegar, and olive oil until well combined. Season with salt and black pepper to taste.
Assemble the Salad

Combine and Serve
Slice the grilled chicken and add it to the salad bowl. Drizzle the honey mustard dressing over the salad and toss gently to combine. Serve immediately.
