Fish and Breading

Sandwich Assembly

Method

Preparation of Fish

  1. 1

    Prepare the Breading Mixture

In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well to create a uniform dry mixture.

  2. 2

    Coat the Cod

Dip each Alaskan cod fillet into the dry breadcrumb mixture, ensuring an even coating on all sides. Shake off any excess flour.

Frying the Fish

  1. 3

    Heat the Oil

In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Fry the Cod

Carefully place the coated cod fillets into the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove from oil and place on paper towels to drain excess oil.

Sandwich Assembly

  1. 5

    Toast the Hoagie Rolls

While the fish is frying, split the hoagie rolls and lightly toast them in a toaster or on a pan until golden.

  2. 6

    Slice the Tomato

Wash and slice the large tomato into thin slices.

  3. 7

    Assemble the Sandwich

On each toasted hoagie roll, place a leaf of romaine lettuce, followed by a fried cod fillet, a couple of tomato slices, and a generous spoonful of homemade tartar sauce. Close the sandwich and serve immediately.
