Omelet Preparation

    Prepare the Vegetables

    In a skillet, heat the olive oil over medium heat. Add the diced onions and sauté for about 2-3 minutes until translucent.

    Add the sliced mushrooms to the skillet and cook for another 2 minutes until they begin to soften.

    Stir in the diced tomatoes and spinach. Cook until the spinach wilts, about 1-2 minutes. Season with salt and black pepper to taste.

    In a bowl, whisk the egg whites until slightly frothy. Pour the egg whites over the vegetables in the skillet, tilting the pan to spread evenly.

    Cook the omelet for about 3-4 minutes, or until the egg whites are set. Gently lift the edges with a spatula to allow any uncooked egg to flow to the edges.

    Once fully cooked, fold the omelet in half and slide it onto a plate.

    Cook the Turkey Sausage

    In a separate skillet, cook the turkey sausage links over medium heat, turning occasionally, until they are browned and heated through, about 8-10 minutes.

    Remove from heat and slice the sausage links into bite-sized pieces.

    While the sausage is cooking, toast the whole wheat bread slices until golden brown.
