    Prepare the Ingredients

    Dice the country ham into small pieces and set aside. Grate the cheddar jack cheese if not pre-shredded. Chop the chives if using.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them together until the yolks and whites are fully combined. Add salt and black pepper, and whisk again to incorporate.

Cooking

    Heat the Pan

    Place a non-stick skillet over medium heat and add the butter. Allow the butter to melt and start bubbling, but do not let it brown.

    Cook the Omelet

    Pour the whisked eggs into the skillet, tilting the pan to spread the eggs evenly. Allow the eggs to cook undisturbed for about 2-3 minutes until the edges begin to set.

    Add Filling

    Once the edges of the omelet are set, sprinkle the diced country ham and shredded cheddar jack cheese evenly over one half of the omelet.

    Fold and Finish Cooking

    Using a spatula, gently fold the other half of the omelet over the filling. Let it cook for another 1-2 minutes until the cheese melts and the eggs are fully cooked.

    Plate and Garnish

    Slide the omelet onto a plate. If desired, sprinkle chopped chives on top for garnish before serving.
