Main Ingredients

Breakfast Potatoes or Cheese Grit Casserole

Sausage Gravy

Biscuits

Method

Cooking the Eggs and Meat

  1. 1

    Prepare the Ingredients

Gather all the ingredients needed for cooking the eggs and choice of meat.

  2. 2

    Cook the Meat

In a skillet over medium heat, cook the choice of meat (bacon, sausage, or ham) until crispy or cooked through. Remove from heat and set aside.

  3. 3

    Cook the Eggs

In the same skillet, crack the eggs and cook to your desired doneness (scrambled, fried, or poached). Season with salt and pepper.

Breakfast Potatoes or Cheese Grit Casserole

  1. 4

    Prepare the Breakfast Potatoes

If using breakfast potatoes, wash and dice the potatoes. Boil them in salted water until tender, then drain and sauté in a skillet with olive oil until golden brown.

  2. 5

    Prepare the Cheese Grits

If using cheese grits, cook grits according to package instructions, adding cheese in the last few minutes of cooking until melted and creamy.

Making Sausage Gravy

  1. 6

    Cook the Sausage

In a saucepan over medium heat, cook the ground sausage until browned and crumbled. Drain excess fat if necessary.

  2. 7

    Make the Roux

Sprinkle the flour over the cooked sausage and stir well to combine. Cook for about 1-2 minutes to form a roux.

  3. 8

    Add Milk

Gradually whisk in the milk, stirring continuously until the mixture thickens. Season with salt and black pepper to taste.

Baking the Biscuits

  1. 9

    Prepare the Biscuit Dough

In a large bowl, mix flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in milk until just combined.

  2. 10

    Shape and Bake Biscuits

Turn the dough onto a floured surface, pat it down to about 1 inch thick, and cut out biscuits. Place them on a baking sheet and bake at 425°F (220°C) for 12-15 minutes or until golden brown.
