Preparing the Dough

    Activate the Yeast

    In a small bowl, combine warm water (1.5 cups) and sugar (1 tbsp). Stir to dissolve the sugar, then sprinkle the active dry yeast (1 tbsp) on top. Let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tbsp). Once the yeast mixture is frothy, add it to the flour mixture along with olive oil (2 tbsp). Stir until a dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface. Knead for about 10 minutes until the dough is smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour.

Shaping and Boiling

    Shape the Bagels

    Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole through the center with your thumb to form a bagel shape. Stretch the hole gently to make it larger.

    Prepare the Boiling Solution

    In a large pot, bring 10 cups of water to a boil. Add baking soda (0.5 cups) and honey (2 tbsp) to the boiling water.

    Boil the Bagels

    Carefully drop the shaped bagels into the boiling water, a few at a time. Boil for about 1 minute on each side, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.
