Pancake Batter

Method

Prepare Pancake Batter

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk together until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, whisk together the buttermilk, large egg, melted unsalted butter, and vanilla extract until smooth.

  3. 3

    Combine Mixtures

Pour the wet mixture into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are okay.

Cook Pancakes

  1. 4

    Preheat Pan

Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

  2. 5

    Pour Batter

Using a measuring cup, pour about 1/2 cup of pancake batter onto the hot skillet for each pancake.

  3. 6

    Cook Pancakes

Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

  4. 7

    Keep Warm

Transfer cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining pancakes.

Serve Pancakes

  1. 8

    Stack and Top

Place two pancakes on a serving plate, stacking them on top of each other. Drizzle with maple syrup, add fresh berries on top, and sprinkle with powdered sugar.

  2. 9

    Enjoy

Serve immediately and enjoy your delicious 2 Stack pancakes!
