Method
Dough Preparation
- 1
Activate the Yeast
In a small bowl, combine warm water (1.5 cups) with the active dry yeast (2 tbs) and granulated sugar (2 tbs). Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
- 2
Mix the Dough
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Once the yeast mixture is frothy, add it to the flour mixture along with olive oil (2 tbs). Mix until a dough begins to form.
- 3
Knead the Dough
Transfer the dough to a lightly floured surface. Knead the dough for about 8-10 minutes until it is smooth and elastic. If the dough is sticky, sprinkle a little more flour as needed.
- 4
Let the Dough Rise
Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Shape the Bagels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole through the center using your thumb to create the bagel shape. Stretch the hole slightly to make it larger.
- 7
Boil the Bagels
Carefully place each shaped bagel into the boiling water, a few at a time. Boil for about 30 seconds on each side. Remove with a slotted spoon and let them drain on a wire rack.
- 8
Add Toppings
While the bagels are still wet, sprinkle with sesame seeds (0.25 cups), poppy seeds (0.25 cups), and coarse sea salt (1 tsp) as desired.
- 9
Bake the Bagels
Preheat your oven to 425°F (220°C). Place the bagels on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
